Simple nutrition. Whole grains are better than processed grains. Vegetables are good for getting needed nutrients (Mustard greens for example are extremely high in calcium, bell peppers are high in vitamin C, and don’t have all the sugar of oranges.). Protein is good if you need to avoid carbs. Fats to a certain degree are necessary, and should never, ever be completely eliminated from your diet. I found an excellent book a long time ago that explains nutrition very well. It’s out of print but easily available via Barnes&Noble’s Used and Out of Print Section. It’s title Everything You Always Wanted to Know About Nutrition by David Reuben M.D.
