My 7 1/2 yr old daughter also has salt-wasting CAH.  She is extremely into outdoor play and various sports activities (anything physical to drive me batty).  We've let her play soccer, softball, run, ride her bike, skateboard, roller blade and ski and do not follow her around worried about what if's. 

She is very smart and she knows when she isnt feeling well.  She can explain her condition (in detail) to anyone without any problems and isnt afraid to do so.  Sure, I have concerns that if she was injured so badly and couldn't talk, how on earth someone else would react to her but we are always within reach and would be there to assist.  We carry her shot kit everywhere by the way!

We just decided that if we are doing everything possible to ensure she stays healthy and gets her meds then we want her to live her life to its fullest. We already disrupt her schedule by taking her out of school for doctors appts and blood draws, labs and sonograms.....not to mention the other normal kid sicknessess.  We want her to grow up and enjoy her life and not be bogged down with all that CAH "could" do to her. 

Those people at the ski resort are probably really concerned and want to help and its good to make them aware of your concerns but just like the school staff and others at daycares and church, they cant be mom and dad and do what you would do if you were there.  I would let the kids have fun and enjoy themselves.  Tell them they have a responsibility to manage their CAH too.  Tell them to be careful.  For us its worked out great......
