Genetic testing could tell you for sure whether Christopher has CAH, what type it is, and if he is heterozygous as has been suggested. This information would give the endo a more complete picture and preclude other causes of these symptoms.
 
Growth rate and bone age are other areas they may check. If CAH is untreated, or if treatment is delayed, there can be a resultant loss of growth potential, leading to shorter stature as an adult. Others on this board have reported behavioural problems in CAH children who were not getting the right amount of medication. With symptoms of the variety and severity you describe, wouldn’t you expect more direct intervention and treatment than "watching"?
