Hi Janet I hope you don’t mind me asking but what part of the UK are you from?  When my son was younger I was told exactly the same as you were, however now my son is older I have learnt that many things I was told was not related to his CAH, probably were and although they were not life threatening, a little extra hydro occasionally does no harm.  Also with a recent change of endo’s I have also discovered that most seem to differ on what a optimal 17 OHP morning level is.  We have been advised to give extra hydro for stressful situations such as exams.  I agree with Toni and that CAH is a very individual condition and as the child gets older they learn to recognise when they need extra meds, as many adults who post on this board seem to do too. I think doctors are still learning where CAH is concerned, when my son was young the average dose was 25 mgs hydro per square metre however now many think between 12 - 14 mgs  is suffice, again depending on the child. It seems many youngsters were over treated not so long ago!
