My Olivia (CAH, now 5) used to have very hard and dry poop. After consulting with her ped, we took her off milk and milk products. It was amazing the difference it made. On the other hand, Ruthie (no CAH, now 3) used to have diarrhea. She was also taken off of milk and milk products -- solved her problem as well.

Both of  my girls are now back on milk and milk products. Both responces were an allergic response due to immature immune systems. Most kids will out grow the problem by the time they are 12-18 months -- my girls were just a whole lot slower!
