One thing to keep in mind is that an honest endo will tell you that they don’t really know that much about the disorder and how to throttle med levels exactly- mainly because they’ve only been testing for a few years (at birth) and their sample is so small.  That said, they do know how to keep our kids alive and relatively healthy.  I would encourage soliciting a second opinion if that’s possible.  We left our initial endo because he wasn’t willing to answer questions and seek solutions.  Our current doc is actively studying CAH and always looking for ways to make things easier on the family.
