I must say that 28 years of age is a little on the older side to get diagnosed with CAH. Even if it is Late Onset CAH I think they usually discover it earlier.
Anyway, I would go to another Endo and not only have the tests run again to test for CAH but also have your Thyroid tested. Although the "obese" part is not usually a factor in UNTREATED CAH, you can gain about 20 pounds with hypothyroid disease. The reason for the weight issues associated with CAH is usually when the person is overtreated with steroids and some even swell up when they are on a small amount of steroids.
It has been my experience that untreated CAH usually renders the person unusually skinny and without an appetite.
